摘要: 环境中的视觉、听觉、嗅觉等单感官通道的线索对人们的饮食决策有着不同的影响,而这些线索主要通过影响个体对于食物的感知,影响个体的情绪反应或基于线索和食物之间的图示一致性来发挥作用。当环境中的感官线索来自多个通道时,人们会对这些线索进行多感官加工,进而做出饮食决策。个体的特质及动机、饮食决策的范式及情景、社会文化环境都有可能发挥作用从而调控感官线索对饮食决策的影响。未来研究可以借助虚拟现实,机器学习等技术,对环境感官线索影响饮食决策背后的机制进行更深入的研究,并且基于已有的理论框架制定有效的健康干预策略。

Abstract: Numerous studies have shown that the surrounding environment can influence people’s dietary decisions. On one hand, unisensory environmental cues, such as visual, auditory, and olfactory cues alone, have been shown to have different effects on individuals’ dietary decision-making. These cues primarily function by influencing people's perception of food, mental state, and/or the schema congruency between the cues and the foods. On the other hand, recent studies have also demonstrated that multisensory environmental cues can influence dietary decisions. A number of factors, such as individual traits and motivations, choice paradigms and scenarios, and sociocultural contexts may all play moderating roles in the effects of multisensory environmental cues on dietary decision-making. Future research can utilize virtual reality, machine learning, and other technologies to further investigate the underlying mechanisms of such influences, which has direct implications in developing effective health intervention strategies.
